BAKING AT HOME. LEMON BISCUITS.


It has to be said that my bank balance definitely took a big hit over the Christmas period and is still on the road to recovery - and with the big v-day looming over us, there isn't a more cost effective, quick & easy present for your loved one than grabbing your apron and whipping up some lovely biscuits!

Becki and I both have a sweet tooth which can sometimes be a little dangerous as we are definitely capable of annihilating an entire packet of biscuits, chocolate rice crispy bites etc - simply the lot. In my eyes if you don't buy naughty goodies you won't eat them, so in my kitchen you won't find a chocolate bar or packet of crisps in sight - but I do suspiciously have all the ingredients to make a batch of biscuits (woohoo) and the way to our hearts is definitely through our stomach!


So we chose to make each other lemon biscuits for valentines day: 115g unsalted butter, 100g caster sugar, 1/2 zest unwaxed lemon, 1 large egg yolk, 225g plain flour, pinch of salt, 1/4 teaspoon of baking powder, 1/2 tablespoon of lemon juice - they were delicious!


Mix the butter, sugar and lemon zest until the mixture is creamy, then beat in the egg. Sift the flour, salt and baking powder & add the lemon juice - mix with a spoon and then your hands to make a firm dough. Wrap your dough in cling film and leave to rest in the fridge for 10 minutes... then roll, cut away and bake for 10 - 15 minutes until golden brown. Enjoy!
